Gaming device on ubuntu server

I want my Ubuntu server (with CasaOS) to be a machine to run old games that according to my specifications could run even PS2 games, to stream them on my PC, TV... I've tried romM but I'm not convinced by the js emulator. From what I've seen sunshine/moonlight they can work well but I don't know if it's possible even since they don't have a graphical interface, and in case you can I don't know how to configure sunshine with an emulator and all that stuff (I've already looked for tutorials on the internet). So if anyone can give me a hand I'd appreciate it (I'm a newie)
