Email Hosting

Hey guys, Im a bit new to the whole concept of self hosting stuff, I have a few laptops I am turning into servers so I can host a few personal stuff, one of which I have is a laptop with an internal 1tb hard drive, along with another 2tb USB'd in, and Im wondering if it would be astronomically hard to have my own selfhosted email service complete with custom email handle? and if so how would i go about doing it?
