Can you reccomend me OS/apps for my purpose?

Hello, it is a long time since I experimented with NAS so I am now out of the loop and hope you could help me. I am looking for OS for my NAS or apps that I could run on OS that would fill my needs. I tried some of them but sadly I have not enough time to try many different ones (I have a little kid that I want to spend time with as much as possible). I daily-drive Arch Linux and have used Ubuntu/Debian-based distros before. All devices at my house run on Linux or Android except my wifes laptop, which runs on Windows. I would like if network drive and VPN worked for her too. I have tried Unraid but I am not sure about reliability because the OS itself runs on USB drive and also I would prefer open-source solution if possible. I am now running Proxmox with some docker images and VMs but I have a trouble finding some applications that are easy to setup - expecially network drive (I need it to use secondary drive with redundancy. What I am looking for: RAID or redundancy (I have 2 similiar data drives) NAS (network drive, optionaly plus something like Google Disk - IDK if it's better to use something like OMV or Nextcloud?) VPN (currently using Wireguard) Quick drop file sharing via url Immich PiHole/AdGuard Google Docs alternative Online notes Online calendar Jellyfin or something similiar Home Assistant simple webpage or WordPress NVR something to monitor my network traffic with (I have suspicion that some of my smart devices use a lot more data than they should so I would like to look into that) maybe local LLM, but not necessary Configuration of my "server" right now: Ryzen 3 1200G (4/4) 32GB ECC RAM 256GB system NVME drive 2x 2TB data drive GT 710 2GB (motherboard sadly won't allow boot without graphics card) Proxmox Thank you for your time.
