Stand-alone: Temperature and Humidity are a popular alternative. Especially if you use a nixie tube that has a symbol variant with Celsius and % or does something like a bargraph.

My own personal fav project for non-clock nixie is a Computer Hardware Monitor. For which i created a small Nixie controller that can be controlled from PC via a tiny serial program that either retrieves sensors or fun values like Audio Levels.
