Good Logo/Design for Cafe?

My wife and I are currently opening a cafe/coffee shop. We finalized on the name but are having a hard time deciding on a logo. If you were to go to a cafe named “The Coffee Bandit” (not the same name but similar to ours) what would you want as the logo/branding? We’re trying to stay away from the minimalism that something AI would toss out, what would be an eye catching logo/perhaps mascot would make you go “hmm I should check this place out!”
