How Do You Run Your Media Server

I just recently finished a DIY NAS project Intel Core i5-12400 2.5 GHz 6-Core Processor Asus PRIME H610I-PLUS D4-CSM Mini ITX LGA1700 Motherboard Jonsbo N2 Mini ITX Desktop Case Silverstone SX500-G 500 W 80+ Gold Certified Fully Modular SFX Power Supply 16 GB of Ram 1 TB SSD (os/ cache) 2 HDDs (not yet installed) for mirror redundancy Of course im already running Jellyfin on a old thinkcentre and its been running completely fine aside from the lack of HDD space, my hopes for this project were to transfer my entire setup to this machine and recycle the thinkcentre to something else. But now im rethinking of what to do i used TechHuts Proxmox Guide to a tea and got out a pretty amazing set up. But this new machine definitely got thinking of if TechHuts way is really the best way for me, im yet to touch things like unraid or OpenMediaVault my experience lies with proxmox So here i am asking how the community go about their media servers. What do you guys do?! is there a better way? a more efficient way?
