What types of logs are useful to collect?

Linux novice who has a small Docker server running a few services. I’m wondering what kind of logs, if any, are worth collecting and backing up. Both for CachyOS (my current distro) as a whole, Docker container specific, and application specific. I’m not going to pretend I’d really even know what I’m looking at when troubleshooting but I want to be safe and have logs in case I ever need them. Thanks for the help.
