3-2-1 Backup -- Where is your "1"?

Hey all, After investing weeks into ripping my personal DVD collection and I have nearly 2 TB of movies and data, I am realizing how devastated I would be if I lost everything. Currently I have a single 8TB drive, and I am looking to expand that to 2 so that I can mirror using raid to account for drive failure. RAID isn't backup so I know that this is my "first" copy of my data. I would then like to obtain a 3rd 8TB drive that I will plug in, copy once every 2-3 months, and then store disconnected. This will functionally act as my "second" copy. But for my "third" copy the 3-2-1 rule also demands an off-site backup. What are you all using that will account for the multi-TB of storage? I know that AWS offers "cold" storage that is cheap but a pain to get back with a low monthly cost. Thanks!
