Two graphics cards coming home— what should I use them for?

Obligatory apologies for yet another "what should I do" post, as well as mobile formatting. I have a home server running services like Jellyfin (& seerr), DroppedNeedle, Homarr, and more. I want to selfhost a local AI model for my husband. The server currently runs an i7-9700k with RTX 2070. Built out of my old gaming PC parts. I have two video cards coming home with me soon, an RTX 3070Ti and RTX 3080. I want at least one of them to join the server build. Which one should I choose? Any suggestions for util
