I'm paying $200/month, and after tomorrow, I can't access Anthropic's best model with my sub?

If Fable is more expensive to run, just make it consume tokens faster than Opus. Set whatever multiplier makes sense for your unit economics. I genuinely don't understand the current approach. From my perspective, giving us access seems like a win for everyone.
